april is here

I had yoga this morning at the Bendheim Center, which I'm enjoying a lot. Between the Bendheim Center and Gilda's Club, I have had the opportunity to observe the teaching styles of four different instructors so far which has been very helpful in giving me a little window into the diverse world of yoga. In particular, I'm interested to learn more about the philosophy of yoga about which my instructor today recommended I check out her website, which lists a variety of books on the subject.

This evening I prepared a dish, "Baked Trout Saratoga" for my folks and myself. It was my first time preparing this dish, which came out pretty well, I think, although perhaps I could have added a bit more salt and pepper.

INGREDIENTS:
1 (4 pound) whole trout, cleaned
salt and pepper to taste
1 (28 ounce) can diced tomatoes
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
1 clove garlic, minced
1/2 cup white wine
1 lemon, cut into wedges
4 sprigs fresh parsley

DIRECTIONS:
1. Preheat oven to 400 degrees F (205 degrees C). Lightly oil a 9x13 inch baking dish. Season the trout inside and out with salt and pepper to taste, and place in baking dish.
2. In a large bowl, combine tomatoes, olive oil, 2 tablespoons chopped parsley, and minced garlic. Spread evenly over the fish.
3. Bake for 35 minutes, or until fish flakes easily. Baste during baking with wine. Serve garnished with lemon wedges and parsley sprigs.

Tomorrow I plan to have brunch with Liz and then, in the evening I will meet up with Ben to watch the Broadway musical, "Avenue Q," which seems to be absolutely fantastic. All the news that I heard about it is so laudatory. Some very special people - Clare, Eileen, and Judy - gave me tickets to "Avenue Q" as my birthday present. It has been many years since I last saw anything on Broadway, so it should be a memorable experience.

Duane, you're getting to be quite a chef! The recipe has been printed to be tried for dinner; sounds yummy. I envy you for being in a place where you can go to Broadway musicals .... enjoy! :)
